Serve the fluffiest pancakes at a moments notice with this homemade instant pancake mix!
How many times have you craved pancakes for breakfast but always abandoned the idea because you didn’t want to go through all that trouble only for a couple of pancakes? With me, that’s almost always the case. I enjoy a pancake breakfast but to find out that I don’t have one or the other ingredient is annoying, if that’s not the case I’m so lazy that scrambled eggs on toast seem like the way to go. It was when on a round of aimless Pinterest browsing I discovered this Instant Pancake Mix recipe on Laurens Latest! I felt like all my prayers have been answered. I threw all the ingredients in a jar, gave it a shake and VOILA..I had breakfast for the a month sorted.
I’ve tried these pancakes with eggs, without eggs, and with bananas, and they turn out fluffy each time and this is fluffy beyond words. I don’t think I’ve made such light airy pancakes before in my life so naturally I was happy.
Lauren’s version requires eggs, and since the majority of my readers are vegetarian I decided to make these without eggs, and guess what? They turned out just fine. In fact, if I show you both on two separate plates you wouldn’t know the difference, and taste wise I preferred the eggless ones. Go figure!
No seriously though, can you spot the eggless ones between these two? I almost forgot which one is which but the slight hint of egg gave it away. On a different note, because this is a very basic mix so you can make pancakes your way. I made a banana and chocolate chip version one morning when I wasn’t feeling too enthusiastic, and they turned out fab. As good as my from scratch version (which you should try if you want a smaller batch, recipe here). You can add cinnamon, lemon zest, orange zest, nutmeg, chocolate chips, etc..the possibilities are endless so make a batch and try a new version each time. I also made the basic ones and had them with chocolate syrup. Easy and satisfying!
- • All purpose flour (maida), 5 cups or 650 grams approx.
- • Milk Powder, 1 cup (I used Nestle)
- • Baking Soda, 1 teaspoon
- • Baking Powder, 1 tablespoon
- • Caster Sugar, ⅔rd cup or 130 grams approx.
- Toss all the ingredients in an airtight container and store for upto 2 months. Make sure to check the expiry date of each product before adding.
For every cup of pancake mix, add 1 cup of milk or water, 4 tablespoons melted butter, 1 teaspoon vanilla essence and flavourings of your liking. Mix using a fork or whisk.
Heat a non stick pan and grease it with a little butter. Pour about ¼th of a cup of the batter for each pancake on the pan.
One you notice bubbles on top, flip the pancake and cook until the other side is golden.
You can add the following to 1 cup of pancake mix:
1. 2 bananas + ½ chocolate chips for Chocolate Chip Banana Pancakes.
2. 1 teaspoon cinnamon powder.
3. Zest of 2 small lemons or 1 large + 1 tablespoon lemon juice.
4. ½ cup blueberries or strawberries.
Or anything of your choice. This is a very basic mix that you can add anything to.
