Make super crispy deep fried mozzarella bites with an ooey gooey mozzarella center with my simple recipe. Great snack for parties, these mozzarella bites stay crispy for the longest time!
First post on my brand new blog and this is what I chose to post. Ask me why? Because this is one recipe I was the most excited about. I’ve always been a fan of Mozzarella bites you get at restaurants and naturally I decided to give them a try one fine day (aka a few months back). Massive fail. The mozzarella kept oozing out and I couldn’t help but see my mozzarella bites fall apart in the pot. But if you know me, you would know I never say never so despite this failed attempt I tried again and this time with a little bit of research. Turns out the secret to making mozzarella bites is 1. Double coating and 2. Panko breadcrumbs. Now these two might sound alien to youright now but stay with me here and by the end of this post you will know the ins and outs of making the best and might I add, crispiest mozzarella bites. And this crispy ain’t just any crispy. It’s beyond that. These bites won’t turn soggy after a few minutes but will stay crunchy for the longest time. How? Panko crumbs. More about them below.
Before I tell you all about the two magic words (panko crumbs) let me just quickly walk you through the process of making these mozzarella bites. You start by cutting up a mozzarella cheese block into small bite sized pieces, a little smaller than how big you want your mozzarella bites to be, that’s because you need to double coat it with flour, egg wash and panko crumbs. Then you deep fry them. Simple. But the question remains what are these panko crumbs? They are what makes your mozzarella bites super crispy. You know how we coat any deep fried dish with bread crumbs to make the exterior crispy but sometime later we discover that the dish has gone soggy? To avoid that, I baked bread crumbs for a little less than 5 minutes to dry them up. Once dried, breadcrumbs are called “Panko Crumbs”, talk about fancy! These baked breadcrumbs aka panko crumbs serve as a great coating agent and give you the crunchiest of exteriors. It’s pure genius and fail proof.
These mozzarella bites serve as a great appetizer and because they don’t turn soggy you can make them in advance. Remember to heat them before serving because the mozzarella might turn solid after a little while. A quick run in the microwave or one final round of deep frying will fix it up. So now that you know the secrets to making the perfect fried food, here’s my recipe that makes restaurant style mozzarella bites each time..oh and did I mention you only need 4 ingredients to make it? π Well, now I did.
- β’ Bread slices, 5 (without crusts)
- β’ Mozzarella cheese, 250 grams (cut up in bite sized pieces)
- β’ Eggs, 2
- β’ All Purpose Flour (maida), Β½ cup
- β’ Oil, for deep frying
- Start by making panko crumbs (read all about them in the post). Blitz the crustless bread slices in a chopper or food processor until it resembles the texture of sand. Very fine. Now tip these crumbs on a baking tray and bake them in a preheated oven for 4-5 minutes until they're dried out but not golden. You have to keep a very close eye because they tend to burn very quickly so don't leave them alone even for a second.
- Once you have your panko crumbs ready arrange all your ingredients. Start by heating the oil.
- Whisk the eggs in a shallow bowl and transfer the mozzarella bites, flour and crumbs to individual plates. Arrange these neatly in a line, this will help in the assembly process.
- Begin by dunking the mozzarella bites in flour, followed by eggs and finally toll it in the panko crumbs. Repeat the process again (flour, eggs and crumbs) in that same order. Do not change the order. Make sure you generously coat the mozzarella, if you don't coat it well the mozzarella might ooze out.
- Keep lining them neatly on a tray lined with parchment paper of foil.
- Once your oil is hot (medium hot), fry the mozzarella bites until golden brown. Serve hot.
- If you want to serve these when your guests are over, half fry them and give them a final fry right before serving.

Hi Neha,
Milk, sour cream and yogurt (made thinner with water) can be used as substitutes.

Hi Anusha.. You can add the spices to the panko breadcrumbs. π And you can add garlic powder, salt, onion powder, dried herbs π
