A simple fusion recipe, these curried hummus and avocado rolls are the perfect blend of Indian and Lebanese flavours.
One word- Lebanese. Say it and I’m all ears. You know those phases where you’re hooked to one thing and you eat that for days to come? Well, that’s me with Lebanese food these days..especially hummus. I can’t not eat it, so when I saw it Cook Gourmet’s menu this week I knew what I had to order it for this week’s post. Cook Gourmet as you may know, is a brilliant new concept that delivers happiness in a box (yes, really!). In other words, they make cooking easier for you by sending you pre- portioned ingredients in a box that you can use to make a delicious meal. They also give you recipe cards so the whole process of cooking dinner, especially something new, becomes quite relaxed. I’ve partnered with Cook Gourmet, and have been trying their recipes for a couple of months now and I’m nothing short of impressed. Although, I’m HUGE fan of their Italian recipes, I’ve actually tried quite a lot of new recipes because of this collaboration that I probably wouldn’t have made on my own, like this French Vegetable Casserole, Lemon Butter Fish with Asparagus and these Curried Hummus and Avocado Rolls. I keep surprising myself when I make these things because I’m not good with cooking world cuisines and this whole experience of working with them is really helping me polish my cooking skills. The end result is great food, which is a major plus!
Back to this week’s recipe, these rolls were absolutely fabulous and would serve really well in a dinner party as finger food. No kidding, I cut them up in small pieces and served it to my family to share. They vanished in 15 minutes flat, although daddy wanted me to warm them up which I clarified is not an option because it has a fresh salad centre. He wasn’t impressed with the answer :/ My mother on the other hand loved these…she probably had one too many, and I was glad to eat these too because they’re super healthy. The bread is actually wholewheat flatbread (rotis) which is not the toughest to make, it’s smeared with generous layers of curried hummus, which unlike regular hummus has curry powder in it giving it that Indian kick. I personally loved the idea even though I’m not a huge a “let’s eat Indian food all the time” kinda person. This was quite unusual for me to try but I was pleasantly surprised. The only thing though is that I like my hummus super creamy so I added some more olive oil, water and yogurt which wasn’t in the recipe. I also left out the cumin from the flatbreads because I’m not a fan, so the recipes can be customized. You can add or leave out any ingredients depending upon your taste without ruining the recipe, which I think is great!
These rolls have a fresh salad stuffing made with red cabbage, avocados (on of my faves), cucumber, tomatoes and onions. And coupled with the creamy hummus and light flatbreads made for a really nice and healthy meal. I even used market bought flour tortillas when I ran out of the dough (I got lazy and didn’t knead enough :/) and they tasted equally nice with the stuffing. All in all a great sharing recipe that’s ready in a jiffy. 🙂
- For the Hummus
- • Boiled Chickpeas, 250 grams
- • Garlic Cloves, Minced, 4
- • Tahini, 1 teaspoon
- • Lemon, 1
- • Olive Oil, 2 tablespoons (or more; I added more)
- • Yogurt, 3 tablespoons (optional; this is my addition to the recipe)
- • Water, 2 tablespoons (optional; this is also my addition to the recipe)
- • Curry Powder, 2 teaspoons
- For the Salad
- • Red Cabbage, ½, Sliced Lengthwise
- • Cucumber, 1, Sliced Lengthwise
- • Onions, 2, Sliced Lengthwise
- • Tomatoes, 2, Sliced Lengthwise
- • Avocado, 1, Sliced Lengthwise
- • Olive Oil, 1 teaspoon
- For the Wholewheat Flatbread
- • Wheat Flour, 250 grams
- • Dry Methi Leaves, 1 teaspoon
- • Jeera, 1 teaspoon (I skipped this)
- • Ghee, 1 teaspoon
