Serve the fluffiest pancakes at a moments notice with this homemade instant pancake mix!
Makes: 20-25 pancakes
  • • All purpose flour (maida), 5 cups or 650 grams approx.
  • • Milk Powder, 1 cup (I used Nestle)
  • • Baking Soda, 1 teaspoon
  • • Baking Powder, 1 tablespoon
  • • Caster Sugar, ⅔rd cup or 130 grams approx.
  1. Toss all the ingredients in an airtight container and store for upto 2 months. Make sure to check the expiry date of each product before adding.
1 cup of this instant pancake mix makes about 6 pancakes.

For every cup of pancake mix, add 1 cup of milk or water, 4 tablespoons melted butter, 1 teaspoon vanilla essence and flavourings of your liking. Mix using a fork or whisk.

Heat a non stick pan and grease it with a little butter. Pour about ¼th of a cup of the batter for each pancake on the pan.

One you notice bubbles on top, flip the pancake and cook until the other side is golden.
DIY Instant Pancake Mix
You can add the following to 1 cup of pancake mix:
1. 2 bananas + ½ chocolate chips for Chocolate Chip Banana Pancakes.
2. 1 teaspoon cinnamon powder.
3. Zest of 2 small lemons or 1 large + 1 tablespoon lemon juice.
4. ½ cup blueberries or strawberries.

Or anything of your choice. This is a very basic mix that you can add anything to.
