Comfort food at it’s best, this French vegetable casserole is one of the easiest recipes I’ve cooked with great flavours and makes for an delightful dinner.
Gourmet cooking has never been my forte, I never manage to make meals that look half as good as the one you see above. But these days I’ve been killing at it. I’ve been making things I never made before like my cheesy pomodoro gnocchi, Asian flat noodles with shiitake and oyster mushrooms, pesto pasta and with success each time. How? All you need to do is follow the instructions and make gourmet food at home using nothing but what’s in the box already. It’s great for people like me who may be good bakers but are not as refined in cooking world cuisines. And to be totally honest, I’m hooked to them for one major reason – Now I don’t need to go shop ingredients to make something fancy! And since the ingredients are pre-portioned it really takes the pressure off and you can finally enjoy cooking without having to go crazy with measuring and stuff. My latest box came with SO many ingredients and it almost made me think if I can do it. I mean I can, but I had no intention to stand in the kitchen and cook for hours. But I didn’t. As tedious as it may look, this French Vegetable Casserole was one the easiest things I’ve made. Yes, you need to keep adding a lot of ingredients and show a lot of patience while it’s cooking but is that really hard to do? The end result is this fabulous casserole with classic French flavours (P.S. which means I cooked with wine, need I say more?) This is soul food at it’s best!
- • Olive Oil, 1 tablespoon
- • Onion, ½ Cup Chopped
- • Carrot, 50g (Round Slices)
- • Cannellini Beans, 125g (Soaked Overnight)
- • Red Bell Pepper, 50g (Cubed)
- • Yellow Bell Pepper, 50g (Cubed)
- • Cherry Tomatoes, 5 (Halved)
- • Bay Leaf, 1
- • Fresh Parsley, 1 Sprig
- • Fresh Rosemary, 1 Sprig
- • Fresh Lemon Thyme, 4 Sprigs
- • Potato, 100g (Cut Into 1" Cubes)
- • Garlic, 2-3 cloves minced
- • All-Purpose Flour, 1 tablespoon
- • Red Wine, 3 tablespoons
- • Red Chili Sauce, 1 teaspoon
- • Shitake Mushrooms, 6
- • Salt and Pepper, to taste
