Hi guys! The weather is so lovely these days, I couldn’t resist baking and stepping out. I made these adorable Mini Bundt Cakes that are spiced with cardamom and cinnamon and topped with a Maple glaze, these are just perfect with a cup of coffee under the sun! I’ve used Maple in place of sugar in this recipe because it is a healthier alternative to sugar and gives the cake a cake robust flavour! I love slight caramely after taste too!

Makes: 3 mini bundt cakes
Ingredients
- SPICED BUNDT CAKES:
- Flour (maida), 1 cup (128 grams)
- Baking Powder, 1 teaspoon
- Cinnamon powder, ½ teaspoon
- Cardamom Powder, ½ teaspoon
- Butter, ¼ cup (50 grams)
- Pure Maple Syrup, ⅓ cup (80ml) or Sugar, 1
- Egg, 1 or Greek Yogurt, ⅓ cup (90 grams)
- Vanilla Extract, 1 teaspoon
- Milk, ½ cup (120ml)
- MAPLE GLAZE:
- Butter, 2 tablespoons
- Pure Maple Syrup, ½ cup
- Icing sugar, 1 cup
- Cinnamon Powder, ½ teaspoon
Method
- PROCESS:
- In a bowl, whisk butter for about 3-4 minutes with an electric mixer until it turns pale and fluffy. Add in the egg or greek yogurt, followed by Pure Maple Syrup and vanilla extract.
- Whisk everything until it comes together. Next, add in the flour, baking powder, cardamom powder and cinnamon powder.
- Using a spatula, fold everything until it comes together. Keep adding milk to loosen the batter. Gradually add all of the milk and mix until combined.
- Bake in greased mini bundt pans in a preheated oven at 180 degrees for 25 minutes.
- This batter will make 3 mini bundt cakes.
- Let the bundt cakes cool down properly while you make the glaze.
- In a pan melt butter maple syrup on very low heat. Once melted, mix them and take them off the heat. Add in the icing sugar and whisk that in, followed by ¼ teaspoon cinnamon powder.
- Let the glaze cool down and get slightly thick. Once done, using a spoon top the cakes with it. Decorate with some edible flowers and enjoy with tea or coffee.
