Storing cakes can be a total nightmare if you live in a hot country. Try this tip and keep your cakes fresh and moist even on the next day.
You make a cake and it turns out great. Everyone had a slice and they loved it! Luckily there’s some left for tomorrow so you store it in the fridge and dream about eating it for breakfast. But when you wake up to eat it, it’s not the same cake anymore. It has changed. The edges are dry (especially if it’s not frosted), it’s hard, there’s no moisture..basically the soft, fluffy, moist cake you had yesterday is gone and you cannot do anything to bring it back. BUT you can do something to avoid this problem. You can store your cake in a better way to make sure this doesn’t happen.
If you live in a cold country this really doesn’t apply to you because you can keep your cakes on the kitchen shelf and be done with it but if you live a hot country like India, you know you can’t do that. The next day your cake will smell all funky and let’s face it, a hard but edible cake is wayyyyy better than a funky smelling soft cake. You can leave your cake covered on the kitchen shelf in winters (if you live in a region where you have winters..sorry Mumbai) but in summers storing them in the fridge is your best bet. But that could dry up your cake so to avoid that transfer your cake/muffins to a glass or ceramic plate and then cover it tightly with a cling film and store it in the refrigerator. This way your cake won’t spoil because of the high temperature and won’t dry up because the cling film is protecting it. This works well for cakes without frosting and muffins, but if you want to store a frosted cake, transfer it to a plate and cover it with an inverted bowl. If you have a cake plate with a lid..bravo..use that but this is in case you don’t have one. Take a bowl deep enough and wide enough to cover the cake completely (but it shouldn’t touch the cake) and place it over the cake, inverted.
